Spaghetti Carbonara

1 lb Spaghetti
2 large egg yolks
1/2 cup heavy cream
6 ounces pancetta diced OR equal amount bacon diced
1 cup Parmesan cheese

Place a large point of water on the stove and bring to a boil.

Heat the pancetta or bacon in a skillet until crispy.

Place egg yolks in a small bowl and whisk well.

Once the pancetta or bacon is done drain,transfer to a bowl until needed.

Once water comes to a boil add pasta and cook per package directions.

While the pasta is cooking heat the heavy cream in the pan which was used for the pancetta/bacon, heat. Add the egg yolks slowly and mix well. Then add the cheese.

Drain pasta, place sauce over it and toss to coat.

Crab Cakes

1 lb crab meat
3/4 cup breadcrumbs
3 T Mayonnaise
1 T Worcestershire Sauce
2 eggs

Rinse crab meat well in a colander.
Squeeze dry.
Place in bowl with all other items and mix well.

Make into patties, you should get about 8 medium sized ones.
 
Spray baking pan with no stick spray, place crab cakes on it.
Spray crab cakes with no stick spray, turn over and repeat.

Bake at 425 for 15 minutes, turn over and bake for an additional 15 minutes.

Stuffed Steak Rolls

Stuffed Steak Rolls

2 lbs boneless sirloin, sliced into 1/2 inch thickness (braciole)
1/2 lb. pork sausage cooked
1/2 C. breadcrumbs
1 egg
3 T. oil
1/2 C. water
2 onions sliced

Have butcher cut steak into paper thin slices.
Flatten steak slices on wax paper.
Remove, skin from sausage and break up into small pieces.
Mix sausage with breadcrumbs, egg, garlic, salt and pepper.
Spread the mixture on steak pieces and roll. Fasten with toothpicks.
Add water, marjoram and onion slices. Cover and bake for 45 -60 minutes adding water or wine if pan dries out.
