Portuguese Fried Donuts - SMALL BATCH

3/4 tsp dry yeast
1 Tablespoons warm water
1/4 cup milk
2 T stick butter
1/4 cup sugar
3& eggs, well beaten
2.5 cups flour

Dissolve yeast in warm water.

Melt butter in Milk.

Add sugar; stir until sugar is dissolved.

Add beaten eggs and yeast mixture. Stir and blend well.

Add flour and mix until all flour is dampened, mix until blended.

If dough is too wet, add a little flour as needed.

Place in greased bowls, cover with a towel and let rise until dough doubles in bulk, usually several hours.

Heat vegetable oil for deep frying to 375 degrees. Keep a deep-fat thermometer in the oil and maintain the heat at 350-375 degrees.

Dip fingers in a bowl of flour as you work, to keep dough from sticking.

Pinch off pieces of dough, stretching it and flattening it; then fry until brown.

Use tongs to remove. Drain on paper towels.

Sprinkle with granulated sugar, cinnamon-sugar, or confectioners sugar. OR

Put the finished product into a paper bag with the sugar and shake, shake, shake.

Italian Rice Balls (Arancini)

12 oz. white risotto rice
4 eggs
1 c. grated Parmesan cheese
1 lb. Mozzarella cheese, cut in 16 cubes
1 1/2 c. Italian bread crumbs
Olive oil

Cook rice until sticky. Let cool. Mix rice, 4 egg yolks, mozzarella and grated cheese in large bowl. Form rice mixture into balls (the size or oranges) Dip each rice ball in bread crumbs. Drizzle with olive oil and broil on all sides until well browned OR FRY Makes 14 to 16.

Chocolate Cheese Cake

1 package chocolate cake mix
16 ounces cream cheese
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
4 tablespoons butter
4 tablespoons milk
1/4 cup milk
1/4 cup butter
1/2 cup cocoa
2 1/2 cups confectioner's sugar
1 tablespoon milk
2 tablespoons cornstarch

Make cake mix per package directions

Grease 13x9x2 pan with non stick spray and flour bottom and sides

Beat cream cheese and sugar in bowl, add eggs, vanilla, cornstarch and 4 tablespoons milk

Mix items 8-12 in separate bowl, this is the frosting

Pour cake batter, 1/2 of it in pan, top with cream cheese mix

Pour rest of batter of mix and bake at 350 for about 1 hour

Cool and frost

Flourless Chocolate Cake

12 ounces semisweet chocolate
4 ounces unsweetened chocolate
4 sticks unsalted butter
1 cup brown sugar, packed
1 cup coffee, strong
8 large eggs, beaten

Place roasting pan on bottom shelf with 4 cups water in it. Position another shelf above this for the cake

Place all items, 1-5 in a large pot and melt over med heat

Beat eggs in separate bowl

Take pot off heat and whisk in eggs, whisking until thick and smooth

Pour batter into a 9 or 10 inch springform pan with the bottom lined with parchment paper

Bake for 1 hour and then cool at room temperature

Place in refrigerator after this, still in pan and let sit 24 hours

Release pan, cutting around edge with a knife if needed

Invert cake and peel off parchment and serve

NOTE: Top with Raspberry Puree if wanted.

Banana Date Loaf

1 cup sugar

2 large eggs

1 cup butter

2 teaspoon baking soda

4 cups flour

6 medium bananas

10 oz dates, diced or chopped

Put in loaf pans, should make 2 - 3, fill about 1/2 - 3/4

Bake at 350 for around 60 minutes

Monster Coffee Cake 15x10x3 pan

Coffee Cake


3/4 cup butter (3 sticks)
1 1/2 cups sugar
3 large eggs
1 cup milk
3 cups flour
3 t baking powder
2 t vanilla

Cream together sugar and butter

Add eggs and beat for 1 minute.

Add flour and baking powder, beat 2 minutes, scraping sides.

Add milk and vanilla and beat until well blended.

Place in large baking pan. 15x10x3


4.5 sticks butter melted
7 cups flour
1 1/2 cups packed brown sugar
1 cup white sugar
3 t vanilla

Add all items in a large bowl and mix well.

When crumbs form place evenly over cake.

Bake cake at 350 F. for about 105 minutes (about 1 3/4 hours)

Chocolate Mousse Cake with Chocolate Ganche Icing


15 oz All purpose flour

3.5 oz Chocolate Powder

21 oz Sugar, granulated

.7 oz Baking powder

¼ oz baking soda

7 oz. shortening (Crisco)


Combine all ingredients in a mixing bowl and mix on low speed for 20 minutes.

Next add 9.5 oz of milk and mix for 5 minutes,

Add 6 whole eggs, 9.5 oz of milk and mix for two minutes. Be careful not to over mix. Bake for 55 minutes at 350 degrees F.

Chocolate mousse filling recipe:

Place sugar and water in a pot and bring to a boil Place the 6 egg yolks in a stainless steel bowl and at the sugar and water mixture to the bowl using a piano whip. It will turn into a cream when fully whipped.

Heat1 cup heavy cream and stir in the 8 oz chocolate chips. Add the mixture to the above mousse mixture.


In a stainless steel bowl add 2 Cups heavy cream, the heavy cream and whip until in is like a meringue. Add to the above mixture.

½ ounce unflavored gelatin

2 oz. hot water

Heat up the water and slowly stir in the gelatin. Next add the above mixture to the gelatin and mix thoroughly.

Layout the 3 cakes and frost the top only with the cream1 by1, layering one after the other. You should have a three layer cake filled with cream.


The ganach will be the frosting that will cover the entire cake.

1/2 qt. heavy cream

26 oz. chocolate chips

Bring the heavy cream to a boil in a pot and whip in the chocolate chips until a smooth cream forms. Allow to cool before frosting the cake.

Chocolate Chip Muffins

3 1/2 Cups Flour
1 1/2 Cups Sugar
4 t Baking Powder
1 t Baking Soda
2 Cups Milk
2/3 Cup Canola Oil
2 Eggs
1 1/2 Cup Choc Chips

Add the sugar and egg to a bowl and beat well, scraping down the sides.
Add all other items EXCEPT Choc Chips and mix well.
When mixed, add the Choc Chips and stir.

Spray muffin pans with no stick spray.
Place batter in pans, bake at  400 for 25 minutes.

Should make about 12 Texas Sized Muffins

Vanilla Cream Cake


4 eggs
2 Cups Sugar
2 Cups Flour
2 t Vanilla Extract
2 t Baking Powder
1 Cup Milk
2 T Melted Butter

Cream the eggs and sugar well, scraping down the sides of the bowl.
Add the flour, vanilla extract, baking powder, milk and melted butter

Spray 2 9" no stick cake pans with no stick spray
Pour batter in to pans
Bake at 375 for 25 minutes
Cool 5 minutes and turn out onto plates and continue cooling.

Filling and icing

1 Pint Heavy Cream
2/3 Cup Conf Sugar

Add the Cream and Sugar to a bowl, beat with a paddle beater until whipped. Store in refrigerator until needed.

Slice the layers in 1/2 so there are 4 layers and use the cream for the filling and icing.

Ribs with Dry Rub

1 T Brown Sugar
1  T White Sugar
2 T Paprika
1 t Garlic Powder
1 t Chili Powder

Mix all
Place in zip lock bag

Add 1/2 rack ribs, shake to coat.
Remove and add other 1/2 racj ribs, shake to coat.

325 for about 3 hours.

Vodka Sauce

2 Cups tomato sauce
1/4 cup butter
1/3 cup vodka
1/2 cup heavy cream
1/4 lb pancetta, diced, optional

Add butter to pan and saute pancetta and drain.
Add pancetta back to pan with the Vodka.
Simmer until almost evaporated.
Stir in tomato sauce and cream and heat,

Bolognese Meat Sauce

1/4 cup butter
2 T olive oil
1 carrot, finely chopped
1 stalk celery, finely chopped
1 onion, finely chopped
1/4 lb pancetta, chop fine and fry (optional)
2 lbs ground meat
1 cup white wine
4 cups tomato sauce, home made.
1/2 cup milk, 1/2 and 1/2 or heavy cream

Melt butter in pan and then add celery, carrot and pancetta.
Saute until  browned and remove from pan.

Add ground meat and saute until done, drain

Add the reserved vegetables, pancetta and meat back to the pan.

Stir n wine and cook until almost evaporated.
Add tomatoes and tomato paste.

Cover and cook for 90 minutes over low heat.

Add milk product prior to serving and heat thru.

Coffee Cake 13x9x2

Cake (smaller size)

13x9x2 Pan
1/2 cup butter
1 cup sugar
2 large eggs
3/4 cup milk
2 cups flour
2 t baking powder
1 t vanilla

Cream together sugar and butter
Add eggs and beat for 1 minute.
Add flour and baking powder, beat 2 minutes, scraping sides.
Add milk and vanilla and beat until well blended.

Place in large baking pan. 13x9x2


3 sticks butter melted
4 1/2 - 5 cups flour
1 cup packed brown sugar
2/3 cup white sugar
2 t vanilla

Add all items in a large bowl and mix well.
When crumbs form place evenly over cake.

Bake cake at 350 for about 70 minutes.

Coconut Cream Pie

2 packages Vanilla Pudding, instant
2 cups Milk OR 1 Can Coconut Milk
4 capfuls coconut extract (omit if using Coconut Milk)
2 cups coconut, toasted.

1 pre made pie shell, baked.

1 cup heavy cream (whipped) OR 8 Oz Cool whip

Add the Vanilla Pudding and Milk and mix until thick, fold in whipped cream or Cool Whip
Add 4 t coconut extract (omit if using coconut milk)  and 2 cups coconut.


Cool Whip

Toast 1 cup coconut as garnish and top with whipped cream, could top whole pie or each slice as it is served.

1,000 island Dressing

2 cups Mayonnaise
1 cup Ketchup
1/2 cup relish

Place all items in a bowl and mix well.

Crab Cakes

1 lb crab meat
3/4 cup breadcrumbs
3 T Mayonnaise
1 T Worcestershire Sauce
2 eggs

Rinse crab meat well in a colander.
Squeeze dry.
Place in bowl with all other items and mix well.

Make into patties, you should get about 8 medium sized ones.
Spray baking pan with no stick spray, place crab cakes on it.
Spray crab cakes with no stick spray, turn over and repeat.

Bake at 425 for 15 minutes, turn over and bake for an additional 15 minutes.

Potato Salad

2.5 lbs Potato's
1/4 oz sugar, by weight
3/4 oz white vinegar, by weight
8 oz mayonnaise
4 oz onion, diced onion

Boil potato's in water until fork tender.
Drain and peal.
Slice into small cubes and place in bowl.

Add all other items and mix well.

Chill for several hours prior to serving.

Shepherds Pie

2 T Olive Oil
2 lbs ground meat
2 large onions, chopped
4 large carrots, chopped
2 T Worcestershire Sauce
12 oz tomato paste
18 oz red wine
2 cans peas
20 oz chicken stock
1/2 cup corn starch
1/2 cup water

For Mashed Potato Topping

4 lbs potato's peeled and diced
Pot boiling water
4 egg yolks
12  oz shredded cheddar cheese

Pre Heat Oven to 350

Heat oil in large frying pan.

Add ground beef, saute until done then drain.

Add onions, carrots, Worcestershire Sauce, tomato paste and red wine.

Cook and reduce, about 45 min to 1 hour on low.

Add chicken stock, bring to a boil.

Return beef to pan.

Add peas, drained, can water discarded.

Add 1/2 cup corn starch mixed in 1/2 cup water, simmer until thick.

Pour into large pan and move onto potatoes. Easy clean up use foil 13 1/4x95/8x2 3/4 foil pan.

Potatoes: (can do while cooking the beef mixture)

Boil until fork tender, drain.

Pour back in pot, place on low heat and let simmer to dry out, about 3 minutes.

Place in mixing bowl with 4 egg yolks and mix well, scrape bowl down and mix until no lumps.

Add cheese, and mix well.

When done spoon over beef mixture and bake for about 30 minutes.


This also freezes well, prepared. Wrap tin foil pan well with foil and freeze.
De Frost in refrigerator and re heat at 350 for 60 minutes covered. Remove foil and continue for 30 minutes.
